A time made of love, effort and passion.
The result is special: a cooked, semi-hard cheese,
with a characteristic soft and delicate flavor, balanced, without excess.
It was by refining the techniques used in the mountain pastures by shepherds that the monks of the Abbey of Moggio Udinese, in the 17th century, laid the foundations for the production of Montasio cheese as we know it today, mentioned in price lists as early as 1773
The Consortium’s aim is to ensure respect for the traditional recipe of Montasio PDO and its high quality, recognizable and found in every single wheel produced.
the typicality of Montasio has been protected since 1955, in 1986 it became DOC. In 1984 by the will of the producers and maturers, the Protection Consortium was established. In 1996, Montasio received the PDO Protected Designation of Origin.
In order to produce Montasio, respect for tradition and time is preferred to unrestrained use of technology. Soft processing, with non-high cooking temperatures and non-pushy drying of the curd, makes Montasio a cheese for multipurpose use.
